Eggplant Spread

 

 

 

 

After such a long recipe {Steps}, I had to make something simple and easy. This is one of our family recipes. It’s delicious. It’s all about eggplant and flavors.

 

 

 

 

All you need is eggplants, onion, vinegar, garlic, mayonnaise and salt to taste!

 

 

 

 

After the eggplant is cooked and peeled, put it in the blender along with the onion, vinegar, garlic, mayonnaise and salt to taste!

 

 

 

 

You will get a yummy, soft spread that you can accompany with crostinis or crackers.

 

 

 

 

It’s really super easy! This spread is one of my favorites. Enjoy!

 

 

 

 

Ingredients                                                                                          Serving: 4 to 6

 

2 Eggplants (Approx. 2lbs)
1 Small red onion
2 Smalls garlic cloves
5 Tbsp vinegar
5 Tbsp mayonnaise
Salt to taste

 

Directions

 

Cook the eggplant with the skin for 25 minutes on high temperature in the microwave. {Once done, let it cool down}

In me meantime, chop the garlic cloves and the onion. Mix them with the vinegar.

With a fork, take the inside of the eggplants leaving the skin behind and place it in a blender. Add the onions, vinegar, garlic, mayonnaise and salt to taste. Mix for 1 minute or 2 on high speed until mixture becomes a paste. Let the paste cool down in the refrigerator for 30 minutes before serving.

 

It can be stored in the refrigerator for a day or two. Serve and enjoy.
