Sweet Sabayon

I went to heaven last Wednesday. We made a Classic Sabayon recipe in class. It was delicious, like nothing I have tasted before. I gave in. I’m in love with French cooking and I have to share that love with you.

This is by far the most inexpensive, easiest, delightful and eye catching dessert you could ever make.

All the ingredients you will need are egg yolks, sugar, marsala and your choice of fruit: Strawberries, blueberries, raspberries.

This is marsala. She forever will exist in my pantry. I’m not the same anymore. Blame My Culinary Institute!

This is one of the techniques I learned this week. This is not a toy. This is propane gas tank with a torch. This little helper gives a smoky flavor to the dessert. Use carefully.

You will need a stainless steel bowl to whisk the mixture, plus a sauce pan to help thicken the sauce with a bain-marie technique.

Heat a small amount of water, like 1.5 inches from the bottom of the pan.

In the separate bowl, Place 2 egg yolks in the bowl.

Add 2 tablespoons of marsala.

Add 2 tablespoons of white sugar.


Whisk all the ingredients until you get a uniform mixture. Place the bowl over the sauce pan. Water has to be simmering at low heat. Never stop stirring the mixture until you achieve a thick, frothy and creamy mixture. Don’t allow it to over heat.

Serve immediately. If you allow it to stand for too long, it could start to separate.

Take some strawberries…

Cut them in half and pour the mixture over them.

To give it a smoky flavor, simply use flame. It compliments the dessert with a certain flavor.

It is so good in flavors. I might make this more often than you think.
