This is one of my hubby’s favorite because it’s a healthy dish. He has been bugging me to make it. He saw it at the supermarket a few days ago while we were doing the groceries and I happened to say “I could make that for you.” It slipped out of my lips. Don’t ask me why. That guy could eat vegetables like nobody’s business. I learned how to love and eat veggies from him, but he is and will always be the #1 veggie lover. Guaranteed.
- 1 lb plum tomatoes, diced
- 1 medium white onion, diced
- ⅓ cup finely chopped cilantro
- 1 yellow bell pepper, diced
- Juice of 2 limes
- Salt and freshly ground black pepper
Place the tomatoes, onions, cilantro and bell peppers in a bowl. Season with the lime juice, salt and freshly ground black pepper. Mix well. Serve with corn chips.
